Air Fryer Peanut Butter Cookies

I’ve been converting some of my favorite old-fashioned recipes over to the air fryer and these peanut butter cookies are no exception. If you don't have a big oven available or don't want to heat your house, this recipe is for you!

- 1 cup peanut butter
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla
- 21/4 cups all-purpose flour
- 1/4 cup granulated sugar
Preheat air fryer to 375°F, following manufacturer’s instructions to do so.
Line air fryer basket with parchment paper and spray with vegetable-based cooking spray.
In a large bowl, using a hand-held electric mixer, or a stand mixer, beat peanut butter, butter, and shortening together for 1 minute.
Add brown sugar, granulated sugar, baking soda, and baking powder and beat until combined, scraping down sides of bowl.
Add eggs and vanilla, beat until mixed.
Add flour and combine until just mixed. Do not overmix.
Shape dough into 2-inch balls and roll in the ¼ cup sugar.
Flatten sugar-coated dough balls to one inch thickness and press with tines of fork in one direction and then in the opposite direction down the center of the cookie to create a crosshatch pattern.
Place cookie dough in air fryer basket at least one inch apart.
Cook in air fryer for 5 – 6 minutes or until light golden brown.
Remove from air fryer basket and cool on wire rack for ten minutes.
