  • flour
  • dried dill
  • ground garlic powder
  • kosher salt

  • buttermilk
  • egg
  • panko breadcrumbs

Instructions:
Preheat air fryer to 400 degrees (following manufacturer’s guidelines) Prepare air fryer basket by spraying with vegetable-based cooking spray

Drain a full jar of dill pickles completely of pickle juice. Feel free to set this juice aside for future use, but this won’t be needed for this recipe at any point in the future. Lay pickles flat on a few sheets of paper towels and blot to dry completely. This is a very very important step. Some years ago I tried frying pickle slices and failed to dry the pickles completely and they were a gloppy mess and the batter just didn’t stick. Trust me, you want these pickle slices as dry as you can possibly get them.

Using a large bowl, mix flour, dill, garlic powder, salt and pepper until thoroughly combined. Using a fork or whisk, beat buttermilk and egg into flour mixture until consistency is smooth with only a few lumps.

Pour the panko breadcrumbs into a separate shallow bowl. Dredge the pickle slices first into the buttermilk and flour mixture, coating completely. Secondly, carefully lift the the coated pickle slices and coat thoroughly with a coating of the panko breadcrumbs.

Place coated pickle slices on a baking sheet and freeze or refrigerate (preferably, freeze) for 10 – 15 minutes. Carefully place the chilled pickle slices in a single layer, without touching in prepared air fryer basket – working in batches – and air fry (air crisp) for 10 – 12 minutes, flipping halfway through until light golden brown.

Promptly remove from heat and serve hot with favorite dressing, or on top of your favorite burger or sandwich.
