Happy Saint Patrick’s Day! In a gratuitous nod to my distant Irish ancestry, I bring you this wonderfully decadent and delicious treat: my Boozy S’mores Mint Ice Cream Shake. It’s a bit indulgent and clocks in at over a whopping 800 calories per serving so if you’re trying to behave, this definitely isn’t for you. However, you can leave out the booze, and make it fun for everyone.
Tips & Tricks for making a Boozy S’mores Mint Ice Cream Shake:
Ingredients:
- Crushed Graham Crackers
- Milk Chocolate Syrup
- Large Marshmallows
- Mint Chocolate Chip Ice Cream
- Fresh cold milk
- Bailey’s Liqueur
- Milk Chocolate Squares (for garnish)
Assembling the ice cream shake:
Gather the ingredients together. For four ice cream shakes, pour half cup of crushed graham cracker crumbs into one shallow bowl or ramekin and half cup of chocolate syrup into another shallow bowl or ramekin.
You can toast your marshmallows in advance a number of ways, but the easiest method is by placing six to eight large marshmallows on parchment paper-lined rimmed baking sheet. Place on oven rack 6-8 inches from broiler and cook until lightly golden brown. This should only take a few minutes, depending on your broiler settings. Be aware this happens pretty quickly and you’ll need to remove the baking sheet quickly. Set aside to cool while you prepare your drink.
Dip glass into chocolate syrup, then dip the glass into the graham cracker crumbs.
This step is messy which is what makes it so much fun!
Scoop mint chocolate chip ice cream into prepared glass.
Optional step: add chocolate syrup to mint chocolate chip ice cream in glass.
Add 1 ounce of Bailey’s Irish Liqueur to the glass.
Pour cold milk on top of ice cream and milk in the glass.
Top with roasted marshmallows.
Sprinkle top of shake with crushed graham crackers.
Top ice cream shake with chocolate bar garnish.
Serve immediately and enjoy!

Absolutely! This delicious milk shake can be made with or without alcohol and is a fantastic treat either way.
I went with Bailey’s Irish liqueur, because this goes very well with the “Saint Patrick’s Day” theme I was going for. However, this drink can be made with Kahlua, Amaretto or any other coffee or cream based dessert liqueur.
Totally, feel free to mix it up with different flavors such as vanilla, chocolate, rocky road or whatever you might be in the mood for.

Instructions
Toast Marshmallows
