I’ve been converting some of my favorite old-fashioned recipes over to the air fryer and these peanut butter cookies are no exception. While many common peanut butter recipes call for three or less ingredients, I prefer using the baking soda, baking powder and flour that makes the cookies a little bit lighter and fluffier.
Tips & Tricks for making Air Fryer Peanut Butter Cookies
Ingredients:
- peanut butter
- butter
- shortening
- brown sugar
- granulated sugar
- baking soda
- baking powder
- eggs
- vanilla
- all-purpose flour
- granulated sugar
One of the greatest things about cooking with an air fryer, is the ease and convenience. So pulling out the stand mixer and 11 ingredients for these cookies may seem a little ridiculous, but the effort is well worth it.
Preheat air fryer to 375°F, following the manufacturer’s instructions. Line air fryer basket with parchment paper and spray with vegetable-based cooking spray. In a large bowl, using a hand-held electric mixer, or a stand mixer, beat peanut butter, butter, and shortening together for 1 minute.
Add brown sugar, granulated sugar, baking soda, and baking powder and beat until combined, scraping down sides of bowl.
And then, add eggs and vanilla, beat until mixed.
Next, add flour and combine until just mixed.
Do not over mix. The texture of the dough will be somewhat crumbly like the dough in the image below.
Shape dough into 2-inch balls.
Roll in the ¼ cup sugar.
Flatten sugar-coated dough balls to one inch thickness and press with tines of fork in one direction.
Then in the opposite direction down the center of the cookie to create a crosshatch pattern.
Place cookie dough in air fryer basket at least one inch apart.
Cook in air fryer for 5 – 6 minutes or until light golden brown.
Remove from air fryer basket and cool on wire rack for ten minutes.
