The best thing about this Air Fryer BBQ Chicken Hand Pie, is that you can pull together leftovers from other meals to make a whole new meal. This can be a wonderful thing when you’re trying to serve a crowd of picky eaters (like mine) who refuse… to eat leftovers.
Tips & Tricks for Air Fryer BBQ Chicken Hand Pie
The ingredients are simple and flexible – so feel free to add or subtract anything that may strike your fancy. Whether you’re going for an after school snack or an easy to pull together meal, this dish just works so easily.
Ingredients
- frozen pie shells
- cooked chicken – such as rotisserie
- barbecue sauce
- red onion
- bell peppers
- egg
- cheddar cheese
Preheat air fryer to 375°. Spray air fryer basket with vegetable-based cooking spray.
Feel free to swap out the protein, veggies and cheese types to change the flavor profile. This dish is super flexible and easy to work with.
In a medium-sized bowl, combine chicken, barbecue sauce, red onion and bell peppers.
Roll out thawed pie shells onto clean, lightly floured surface.
Cut pie shell in half by length and by width, so that you have four equal quarters. Use a spoon to scoop a spoonful of the filling into each one of the pie quarters.
Fold the pie quarter in half lengthwise, in order to create the meat pocket, sealing in the filling.
Use a pastry brush to brush the egg over the pie dough.
Arrange the hand pies in a single layer in the air fryer basket and cook for 8 – 10 minutes or until crust is a light golden brown.
Remove from air fryer immediately and top with grated cheddar cheese.
Serve hot. Store leftovers covered, in the refrigerator for up to 5 days.
Reheat your air fryer BBQ chicken hand pie by placing in a 375 degree air fryer for 2 – 3 minutes, or until heated through.
